Red bean soup with Sticky rice cake

Another simple dessert my confinement lady experimented and taught me how to cook.

How this came about was when my aunty saw my piece of sticky rice cake, well intact and untouched in my fridge (in case you are wondering, yes there isn't any mould) and asked if I wanted to cook red bean soup with it.

Here are some of the benefits of red beans :
- Contain saponin, can stimulate the intestinal tract, so it is a good diuretic effect.
- Have more dietary fiber, has a good laxative, helps in bodybuilding and weight loss
- Are rich in folic acid, and maternal prolactin efficacy eat red beans.
- Protects the heart and kidney.

She did not attempt before as well. Tah-dah ! Here it is ! Our red bean soup with a twist !


All you need is :
- Red Beans
- Rock Sugar
- Sticky rice cake (Cut into cubes)

Method :
1. Wash and rinse red bean.
2. Put into the slow cooker and slow cook the beans till soften.
3. Transfer to a pot, add in the sticky rice cake and bring to boil.
4. Add a little rock sugar to taste. (Do not add too much as the sticky rice tends to add sweetness to the soup after it is melted under the heat)

Enjoy the dessert !

Combat the haze - Lotus root soup with green beans and water chestnuts

Combat the haze with this Tcm remedy, shared by one of my friends on Facebook. I decided to try it out over the weekends and it tastes good ! With cooling properties, this soup helps to remove body heatiness.


Ingredients :
1. Lotus Roots 500g
2. Green Beans 80g
3. Water chestnuts 10 pieces
4. Soft pork ribs 300g
5. Salt to taste

Method :
1. Wash the lotus roots, removed the skin and slice.
2. Wash the water chestnuts, removed the skin and cut into halves.
3. Soak green beans for 2 hours before cooking (I did not soak as I'm using pressure cooker)
4. Blanch the ribs before adding into the pot.
5. Add in all ingredients, bring to boil and simmer for 1.5 hours (For pressure cooker, I turn off the stove when it hit three rings and I allowed the pressure to cook and soften and ingredients in the soup)
6. Add salt to taste before serving.

I doubled the portion for the ingredients as I cooked the soup for both meals. The texture of the soup is slightly different compared to using Huai Shan. Try this recipe out for this hazy period and drink loads of water !

Black Beans and lotus Seeds in Pork Ribs Broth

Another soup from my receipe book bought recently.

Black beans help to tonify the blood and eyesight. while ginger nourishes yin removes heat.

Ingredients :
50g Black Beans
50g Lotus Seed
10g Yoke Chok
20g Barley
10g Dried Longan
Some Ginger
400g Spare Ribs
Water
Salt

Method is similar to other soups which I have cooked before (Throw everything into the pressure cooker ! )
