Back to the basics - Luncheon meat with kan-dang & Kio Chup

This dish seems to be pretty popular among my friends, some said it is their comfort food while some commented this is an all time favourite among kids and even the adults - Luncheon meat with kan-dang (aka potato) and kio chup (aka tomato sauce)

It is really basic. All you need is :
Potatoes (Diced)
Luncheon meat (Diced)
Onions
Eggs (To coat the diced luncheon meat)
Tomato sauce
Sugar to taste (if you don't want it to be too sweet)

I pan-fried the potato cubes, luncheon meat (coated with a beaten egg) and onions individually to slight golden brown and set aside.

Next, I prepared the tomato sauce in the wok and using sugar to taste as I did not want the dish to be too sourish. When it's ready, pour everything into the sauce and mix.

Dish and serve.

Optional: you may wish to add some tomato chunks if you are a fan of tomato.



Ideally, you can also prepare the same dish but without luncheon meat and potato. Instead, you can replace with capsicum and tomato chunks and add in the onions. Pour the dish over your fried fish and it tastes just as good.
