I tried this for the first time and Xavier loves it. He ate more than his usual. I tasted the puree. Kinda sweet with the apple and carrot combination and the chicken meat makes it a bit creamy.
Ingredients:
1. 1/2 tbsp olive oil ( I omitted this as the meat itself have natural oil in them)
2. 1/2 small onion, peeled and chopped
3. 350g carrots, peeled and sliced
4. 250ml unsalted chicken stock or use water with a bay leaf
5. 125g chicken breast (I used chicken thigh instead as the brown meat of chicken contains twice as much iron as the white.)
6. 1 small apple, cored, peeled and chopped
Method:
1. Heat the olive oil in a saucepan.
2. Sauté the onion till softened.
3. Add the sliced carrots, pour over the chicken stock or water and bay leaf and bring to the boil. Reduce the heat, then cover and cook for 10 minutes.
4. Cut the chicken into pieces and add to the carrots together with the chopped apple, and continue to cook for 10 minutes.
5. Remove the bay leaf if necessary. Puree in a blender and serve lukewarm.
6. Freeze the remainder in individual portions.
Xavier loves this I guessed as he could finish almost 4-5 big tablespoons as compared to his normal meals.
I have tried to substitute the carrots with tomatoes and it tastes equally nice just that it's more watery. Xavier clears his bowl the same !!
