Jelly heart cheesecake

I was totally craving for this dessert after having to tried the ones made by Angie. And I went to try the recipe from Happy Home Baking.


Everything was alright but the wrong usage of the bowl resulted in a total flop ! This portion above was one of the best few!

Quite a straight forward recipe but the waiting time to allow the cheese to sette before pouring in the jelly topping is pretty crutial.

I was thinking if I can try to make this for National Day celebration though.

Anyway, I precut the strawberries before hand with a heart shape cutter.


U can always cut the berries into half if u don't have a heart shape cutter.

Bought this brand of cream cheese.


And this for the jelly crystals


Ingredients:

Base:
110g digestive biscuits(about 8 pieces), chopped into fine crumbs
40g melted butter

Filling:
250g cream cheese, soften at room temperature
50g icing sugar
1 tablespoon gelatin powder
40ml boiling water
2 vanilla pods (Orinigal recipe was : 1 teaspoon vanilla essence )

1 box Tortally Jelly crystal (strawberry flavour)
1 cup boiling water
1 cup cold water

Method:
1. Mix biscuit crumbs & melted butter together and press firmly with the help of a spoon onto the base of the bowl. (Original was a 18cm cake tin, I dont have one so I used a bowl which was a big big mistake). Chill for 30 minutes.

Probably dessert cups would work better ?

2. Place and dissolve gelatin powder and boiling water in a bowl. Heat a pot filled with some water until just simmering and place the bowl inside the pot. Keep warm.

3. With a mixer beat cream cheese , icing sugar and vanilla pods until smooth & creamy. Blend in gelatin solution and mix well.

4. Pour the cheese mixture into the cake tin. Layer the strawberries on the cheese mixture. Chill for at least 3 to 4 hours.

5. Dissolve the jelly crystal in the cup of boiling water, followed by the cold water. Pour the jelly on the cheese mixture. Let it set before removing.

Mine was a flop because the cling was loosen by the weight of the jelly, ended up all sipped underneath the cling wrapped. If you noticed from the first picture that the strawberries are not completely covered up.
