Sea coconut with Grass Jelly Dessert

After attending Elliot's party, the dessert from Angeli was never off my mind. I had wanted so much to try and make myself and finally I made myself to go and buy the ingredients. Quite an easy dessert to make and yummy, definately cooling under a hot sunny day !! Here's the sea coconut with grass jelly. the lemon and lime gives a tangy feeling.. Ssshiok !!

Ingredients:
1. One can of sea coconut (I used Mili brand)
2. One yellow lemon
3. One handful of lime
4. One packet of chin chow grass jelly

Method:
1. Sliced half a yellow lemon.
2. Wash a handful of lime and cut into halves
3. Cube the grass jelly
4. Mixed everything together and fridge or alternatively add ice or water to lessen the sweetness.
5. Serve chilled

The TODDLER stage ........

In a blink of an eye ! My little man turns one !

Getting cheekier as days go by...... Look mummy !! Hands free !!!

The seductive Xavier ! hahahahahaha

Fast & furious wheels !!

Funny face.. bleah......

By 13 month old, he has a total of 7 pearlie white. 4 on top & 3 at the bottom. Here's one that you can count !!

On 23/04/2009 ~ He walked 2 unsupported steps towards me on the playmat !

On 25/04/2009 ~ He surprised me with a 4 steps ! And best part was when I asked him to show to daddy Don, he did it again ! 4 steps !

I waited with anticipation and excitement that he could make more steps. And guess what ...

On 26/04/2009 ~ @ Plaza Singapura, he gave me a 10 steps on his own !! I was thrilled of course ! Well Done Xavier ! You did it !

After he advances to the officially "Toddler" stage, I realised the changes in him..

1. Then: Fusses during meal times. I had to really yell till the whole house can shake, sing and act like a clown !!

Now: Little Xavier is getting better! I have not been screaming out my lungs for the past one month ! Instead, meal times are much more fun and happy !


2. Then: Separation anxiety.... My presence has to evolve around him even for a min !
Else little xavier comes crawling and chasing after me with tears in his eyes!
Especially in the morning when he wakes.

Now: He wakes up a happy boy. Smiling and crawling into mummy's arm, if not, he will be gazing out of the window to look out for birds. He knew what they are !

I can now just leave him to play by himself while I go and prepare his meals or eat my meals. He will entertain himself with the walker

& boardbooks..

3. Then: Hates to be in playpen, even if there are toys in it, Not even for 5 mins.

Now: Happily playing with his pool of balls, throwing them out one by one to me! And I got to pick up all ! *faint*


4. Then, needs to be carried to be seated on the bumbo seat and giraffe.

Now: He can simply do it himself, be it sitting in the bumbo seat


or getting to ride on the giraffe.


He has been using me to practise his riding on the "giraffe" every night before he sleeps !!

5. Then: Apples or breakfast needs to be mash, refused to chew...

Now: No longer needed to mash, he prefers food with more texture and new tastes ! Apples are cut into bit sized instead.

Signs, action and instructions:

1. He understands "No", "Pain", "water", "bubble" wave to indicate bye bye, Hi or wave both hands when he is happy. Signal for "Milk" after hs meals to indicate that he wants milk.

2. Signs "Thank you" when instructed to. (Depends on mood too !)

3. Will comb his hair when given a comb and asked to do so, clap his hands, places his hand on his ear when any mobile phone sounded.

4. Will headbutt and attempts to hug babies he sees.

5. Sits on any chair without lifting his butt off the seat when command of "STAY" is given.

6. His nap time changes too..

His current routine is:

7.30 am ~ 8 am - Breakfast, intake: 4 table spoons of HT cereal with either one apple or banana and 120 ml of milk.

8.45 am ~ 10.30 am - Bath and bubble time, learning words by watching vcd and self play.

11 am ~ 12.15pm - First nap

12.30 pm ~ 1.30 pm - Lunch, intake: 1 bowl of porridge (5 -7 full tablespoons) and 150 ml milk

1.45 pm ~ 3.30 pm - play time

4 pm ~ 5.15pm - Second nap

5.30 pm ~ 6.15 pm - Dinner, intake: 1 bowl of porridge (5 full tablespoons) and 150 ml milk

6.30 pm ~ 6.45 pm - Bath and Bubble time

7 pm ~ 8.45 pm - Play time

8.45 pm ~ 9pm -Last feed, intake: 270ml

9.30 pm ~ 10 pm - Lights off

10 pm - Good night Daddy and Mummy .. He KOs..... hahahahaha

I am looking forward to see his new developments soon.... Good night !

It's Party month !!

March and April is PARTY Month !! Almost every week, there will be
birthday bash for the individual little ones!!

Apologies to Kaylen, Zhiyan and Elliot as little Xavier is down with mild fever, hence, he gotta be grounded at home. I went to attend the parties on Xav's behalf while daddy kept him accompany at home !

Here's one with Elliot's mummy with the nicely done up tree sculptures for the Jungle theme party !

On the 5th April '09 @ Radin Mas Community Club, was Luann's party, she had a Pooh Bear theme pary. We wore a hoodie suit together ! Check out the blue and white riding hood appearing in the woods of Bedok South Ave 2 !!



Followed by Justin's party at his royal castle and Kayla's party at Megu, Singapore Flyer on 12th April '09.

Justin had a Prince theme and it's so nice to have the kids to decorate their own cuppies

He was sure enjoying the mascots and had even wanted Minnie Mouse to carry him ! Infact to tell the truth, the mummies were more excited than the babies upon seeing the msscots !! Hahahahaa....

After the parties, we headed for Bugis Junction to meet up with Jo for some tea & shopping



and had dinner with dad & mum! Here's little Xavier trying out the car !

I was thrilled when I told Xavier to give a hug to Jayden, guess what he did.. He gave a head butt to Jayden as a form of saying "Hi" and followed by he wanted to plant a kiss on Jayden's face ! So sweet !!!



After that, we went to Ajisen for dinner. Recently, little Xavier has hanged out at Sushi Tei, Ajisen and Waraku. And he likes Chawanmushi ! He always had his fair share when we dines there. He loves udon too ! Here's Xav waiting for his Udon !

Lotus roots with red dates soup

This is another soup taught by Jo. In just a short 20 minutes, using the WMF pressure cooker, I get to drink nice, tasty soup!

This pot as recommended by Jo is great ! Though it's a bit on the high end. But thanks to dear dear who got this Perfect plus set for me, consisting of a 6 litre and 3.5 litre pan. This is useful especially in preparing Xavier's porridge. I do not need to use blender at all!

At the same time, I have also used the soup to cook Xavier's porridge and the result was, he gobbled down all !!

Ingredients:
1. Red Dates
2. Pork ribs for soup
3. Honey dates
4. Lotus roots (Can use water cress, sharkfin melon to replace)

It's simple ! Just throw everything in and set the timer !

Frogleg with ginger slice porridge

Finally, I get to prepare frogleg porridge for Xavier. This can also display the scaredy cat nature in me. Guess what !! I almost freak out when my mil told me that she bought the whole frog !! I was like replying.. erm... can I have just the legs ? hahahaha... She had then kindly chopped up the limbs for me. Sounds gross right !!! I do not dare to touch the legs although it was already skinned and deboned.

How I washed it?! I washed them in a plastic bag, under running tap. Drain away the water, pour the legs onto a plate, rinse again and I just blanch with boiling water and all straight into he pressure cooker with the porridge.

Ingredients:
1. 1 pair of froglegs
2. Few ginger slices
3. Potato
4. Shredded vege (optional)

And out came the nice tender frogleg porridge !

Prawns with salted egg yolk

I got this yummy recipe from Jo. I revised a bit myself though. It's simple and the taste is superb. I was given a 9/10 by Dear dear.

Ingredients:
1. 3 tbsp butter
2. Tiger prawns
3. 2 stalks of curry leaves
4. 3-4 salted egg yolk
5. Evaporated Milk (Depending on what texture you would like to have for the sauce)
6. Tapioca flour
7. Bird’s eye chillies, chopped
8. 1/2 a tsp salt or to taste
9. 1/2 a tsp pepper
10.1 and 1/2 - 2 tsp sugar

Method:

1. Cut a slit on the back of the prawns to devein it.

2. Steam salted egg yolks for 3-4 minutes. Remove and use a fork to break up the egg yolks.

3. Toss prawns in tapioca flour. Pan fry in a little amount of oil till golden in colour. Remove and leave aside.

4. Melt butter in a wok, sauté curry leaves and bird’s eye chillies until aromatic. Add salted egg yolks, keep stirring until egg yolks are incorporated into the butter sauce. 5. Add pepper, salt, sugar and evaporated milk then stir in pre-fried prawns.

Stir-fry briskly to mix.

5. Dish out and serve immediately.

This is my "assistant" hahahaha.. Dear Dear took over to stir fry the prawns when the cranky little Xavier cried for me.

A simple and must-try recipe !!!
